I have been making this meal on repeat recently. Homemade vegan pesto — the rest of the dish is clearly not vegan but you can make any substitutes you need to make it a fully vegan meal! — with spaghetti squash, chicken and topped with a little cheese. So simple and so delicious!!
One of my favorite ways to create a healthy but delicious snack is to throw it all together onto a cheeseboard! I put together this dairy-free cheeseboard that combines some of my favorite things to snack on like fresh cut veggies, my favorite simple ingredient crackers, and some of my favorite types of dip to give some variety! This is the perfect thing to make for a game day, bachelor night, or just hanging out with friends and family.
The key to staying on track during the week and making it through your busiest days is simply being prepared. Having a game plan for your weekly meals is so important. What I found worked best for me in the beginning, was to take note of my favorite meals through experimenting with meals from plans like Tone It Up and trying tons of new recipes that inspired me on social media. Remember, experimenting to find the meals that work for you is something you have to do.

Let's talk hydration for a minute. Sometimes this piece of self-care gets overlooked and put to the wayside. Water regulates body temperatures, transports nutrients, lubricates the joints, and flushes out toxins and wastes. When you're dehydrated, toxins are reabsorbed by the body, stressing your liver and eventually weakening your immune system. SO moral of the story, let's aim to avoid de-hydration whenever possible!
